March 1: Rise and Shine

Yes, it's yet another breakfast salad. Once you get into the habit of eating salad in the morning, you just can't stop. It's a great way to start the day, full of energy and nutrients, instead of the empty carbs and fat typical in most tradition western breakfasts. I like my breakfast salad sweet, so I always start with at least one kind of fruit. I also like to add some crunchy nuts, since they remind me of eating granola. If it is a fruit salad I don't dress it, but when it is a green salad, I go for a sweet dressing like this honey citrus poppy-seed one. Super yum!

How to: Tear green curly-leaf lettuce to create a bed for chopped Royal Gala apple and sweet naval oranges. Chop natural almonds and toast on a cookie sheet (place in a cold oven. Set temp, and remove nuts as soon as oven reaches 385 F).  Add a generous drizzle of your favourite sweet and creamy dressing.
