February 12: Sweetness and Light

I know it's a bad idea to eat before bed, but sometimes I get a craving for something sweet in the evening. If you are thinking that chocolate would be more appropriate, believe me, I do that too-- far too often! This dessert salad may be high in calories, but it is also very high in nutrition, and it satisfied my sweet tooth. I'm not a huge fan of rasins in salad, but these golden ones are particularly good. This cheese is not sweetened, but it was a perfect complement for the sweet dressing.
The only thing I was not really happy with was the peanuts, which were a bit stale. I think pecans would have been much nicer.

Recipe:

On a bed of red and green frisee lettuce, sprinkle crumbled soft goat cheese, golden raisins and freshly toasted chopped  nuts or peanuts. Drizzle generously with a lemon poppyseed dressing.
