February 19: How to Cheat

Want to make yourself look like an amazing salad chef in record time, with far less fiddling? I totally cheated on this one and it was delicious! Instead of buying all those nuts and seeds and raisins you see here, I bought trail mix. The down-side is that the nuts are already roasted, so you don't get the fresh-toasted flavour, but the up-side outweighs it. This mix had cashews, almonds, peanuts, raisin, pumpkin seeds and sunflower seeds. It was lovely.

I also cheated by using broccoli crowns and bagged baby carrots, which my daughter-in-law just happened to have in her fridge. you don't have to peel then, and you barely have to cut them. Altogether, this one is a breeze-- just be careful that you don't buy a trailmix that has chocolate chips in it!

Recipe: Cut 2 crowns of broccoli carefully into small florets. (I also dice up the stems and add them). Cut 10 baby carrots into chunks or coins, and add 1/2 cup of  your favourite trail mix. Toss with dressing

Dressing: whisk together 1/4 cup mayonaise, 1/4 cup white vinegar and 1/4 cup grapeseed oil with a teaspoon of sugar.
