February 24: Stuffed Tomato

I`ve been thinking about stuffing a tomato for a while now, and when I finally did it, I was not impressed. The salad was good, but it didn`t look great in the tomato, and there wasn`t room for much at all. So, I stuck a cucumber rose on top and put the rest of the salad around it.

This as a light, refreshing tasting salad, nice for an afternoon nibble. The basil is growing in the dining room and it`s really starting to produce. I just loved fresh herbs; there is nothing like them for a flavour booster. I raided mom`s china cabinet (well, one of them) again for this very pretty dish.

Recipe:
Cut the top off a tomato, cutting into the flesh and avoiding the peel, cut a grid pattern and scoop out the cubes with a spoon. Dice an avocado and add the tomato cubes, as well as another half tomato, also cubed. Snip fresh basil into small pieces. Squeeze the juice of half a lime over all and toss lightly.

Again, I would just chop all of the tomato instead of going through the first part another time.

To make the cucumber rose, see yesterday`s post.
