January 24: Seafood Salad with a Twist

This salad would probably never have happened if I weren't about to move. Emptying my cupboards, I found a can of smoked oysters, and decided to see what I had that would go with them. Avocados always go well with seafood, and I just happened to have one left. It was a little overripe, but still very tasty. Lemon is a natural with seafood, but I find that lime is much nicer with avocado, and it was a nice compliment to the oysters as well.

I know smoked oysters aren't everyone's cup of tea, but I've always thought of them as a high treat, and they are loaded with nutrients. (Find out more from the experts: http://www.cloverleaf.ca/en/products/view/CloverLeafSmokedOysters/) Even after you drain them, there is enough oil on the oysters that you don't need a rich dressing. I was pleasantly surprised by this salad. I don't eat oysters often because I always think of them with crackers. Today I learned that they go much better with lettuce. I'll definitely be making this again.

Recipe: Slice an avocado and arrange at sides of a luncheon plate. Tear read and green lettuce and pile in centre. Top with smoked oysters (I used a whole can) and lime wedges.
