Hello, my name is Leora, and I'm a salad addict. To feed my addiction, I've decided to create and eat a different salad every day in 2013. I might not always succeed fabulously, but I'll be honest about my failures. So join me in my official Year of the Salad!

January 3: Greek (ish) Salad
I love Greek salad, but I don't eat most of the ingredients (onions, peppers and black olives) I can eat cheese, but only of the goat variety, and even then, I only tolerate it if it's consumed with veggies. So this is my solution. I need to eat a lot of raw greens every day, but cauliflower, being a member of the cabbage family, serves just as well. I used grape tomatoes this time because they were on sale. The amounts are what I used; adjust it for your taste and needs.
Recipe:
1 cucumber, quartered and sliced
1 small head cauliflower; cut out stem and break into small florets
500 g. grape tomatoes or 2 large tomatoes, chopped.
250 g. goat feta in water
Dressing: Equal parts Italian dressing and water from the feta. Toss all together and store in fridge for at least 2 hours before serving. (It's even better the next day!)
