January 6: The Mozza Salad

My mouth is watering again just looking at this. It's probably the least healthy salad I've made, but it was sooooooo good! Since giving up all the foods that make me ill, I think I've missed burgers most. Specifically, I've missed A&W mozza burgers. Once in a while, I delude myself into believing that I can go in and order one without the bun. After a very bad night, I once again face the fact that fast food and I do not mix. I decided to create a salad based on the mozza, but turning it upside down, so that the toppings become the main event. I substituted goat mozzarella and added sauteed mushrooms. It was simply scrumptious! Even my son, who is still visiting, ate it all up and came looking for more. I see more burger-based salads in my future.

Recipe:
Create a bed of shredded iceberg lettuce. Add slices of tomato and drizzle generously with Thousand Island dressing. Pile browned, lean ground beef in the centre, and top with sauteed mushrooms and cubed mozzarella. Finish with a slice of bacon, and eat it while it's hot!
